Cook in water with the herbs on a low heat for about 40 minutes. When cooked, add crusty bread cubes, EVO oil or spicy oil.

Pearl spelt salad

Spelt salad recipe for 4 people: 250g pearl spelt, 200g cherry tomatoes, 150g pitted green olives, 150g grated cheese, 100g rocket, basil to taste, EVO oil and salt to taste.

Wash, dry and slice the cherry tomatoes and olives, chop the rocket and basil finely. Meanwhile, cook the spelt for 20/25 minutes. When the spelt is cooked and cooled, add the EVO oil, salt and all the ingredients. If you like, you can add a balsamic vinegar glaze.

The typical “farecchiata” of Castelluccio di Norcia

Ingredients: 1.5 litres of water – 500 g of roveja flour.

Boil water with coarse salt. Add the flour and cook for 40 minutes, stirring constantly, until the mixture is smooth and lump-free. Prepare a frying pan with the garlic, oil and chopped anchovies. When cooked, arrange the farecchiata on a flat plate and sprinkle with the fried mixture.
